Oak Bay ice cream maker incorporates Indigenous learning with new flavour

T’A’HW (fir tips) are bright green new growth at the ends of the branches in spring.

They’re soft, citrusy and packed with vitamin C.

“Fir tips are more than a seasonal ingredient – they’re nature's way of signalling what our bodies need heading into warmer, longer days. These tender parts can be infused into syrups, teas, broths or even turned into something unexpected, like ice cream.”

That’s what 49 Below Ice Cream learned from Indigenous chef and knowledge keeper Jared Qwustenuxun Williams, who guided them through how and when to harvest, and shared stories passed down from elders about the cultural and culinary significance of T'A'HW.

In honour of Indigenous Peoples Day on June 21, they paired up to create a limited run of T’A’HW fir tip ice cream.

Fir tip ice cream is available by the pint at the Oak Bay shop.

Through the Philanthropint program, $3 from every pint will support the Healthiest Babies Possible program at Hiiye'yu Lelum–House of Friendship in Duncan — offering care, connection, and resources for Indigenous parents in the Quw’utsun’ region.
